I love anything by Yasunori Mitsuda. My favorite of his so far is probably Chrono Cross.

Besides Mitsuda, I also really like the Radiant Historia's and Rhythm Heaven's OSTs.

I love video game music, so nailing down to one is nigh impossible. But to name a few of my favorites:

Final Fantasy IV, VI, XIII
Chrono Trigger
Shadow of the Colossus
The Legend of Zelda: A Link to the Past, Ocarina of Time, The Wind Waker, Skyward Sword
The World Ends With You
Sonic Generations (recent, maybe, but wow, was it great)
Kingdom Hearts 1, 2, Birth By Sleep
Super Mario 64, RPG, Sunshine, Galaxy 1 and 2
Tales of Symphonia

It just depends on your mood. Sometimes I feel like listening to it, sometimes I don't.
